These pea fritters are quick to whip up and super versatile. Adults can enjoy them with a poached egg on top, and for the little ones, slice into strips and serve with Greek yogurt dipping sauce.
Directions
Place peas in a microwave safe bowl. Cover with enough water to submerge peas and microwave 1 minute, until tender. Drain water.
Place peas, eggs, flour and baking powder in a blender. Blend until combined.
In a medium skillet, add oil. Once warmed, drop about 1 tablespoon of pea mixture into skillet at a time. Cook 2-3 minutes on each side, until golden.
In a small bowl, combine yogurt, garlic powder, onion powder and thyme.
Serve pea fritters with Greek yogurt mixture. For adults, top fritters with a poached egg, if desired.
Refrigerate leftovers up to 3 days.

To ensure food safety, eggs should be cooked until both the yolk and the white are firm. Consuming raw or undercooked eggs may increase your risk of foodborne illness, especially for those with certain medical conditions. For recipes that call for eggs that are raw or undercooked when the dish is served, use either pasteurized shell eggs that have been treated to destroy Salmonella, or use pasteurized egg products.
