One-Pan Sweet Potato and Egg Fajitas

  1. Preheat oven to 400° F

  2. Dice all veggies and set aside

  3. Line a baking sheet with foil and evenly spread bacon

  4. Top bacon with diced veggies and diced chicken apple sausage, and then season with salt and pepper

  5. Place in oven and bake for 10 minutes, remove and stir

  6. Place back in oven and bake for another 10 minutes, remove and stir again

  7. Place back in oven and bake for 5 minutes

  8. Remove from the oven, make holes in between veggies, meat, and bacon mixture and crack the eggs into the holes

  9. Bake for another 10-12 minutes until eggs are fully cooked to 165° F

  10. Serve with tortillas, pico de gallo, shredded cheese and cilantro!

  • 1/2 green pepper, seeded and diced
  • 1/2 red pepper, seeded diced
  • 1/2 yellow onion, diced
  • 5-8 slices of bacon
  • 2 diced chicken apple sausage links
  • salt and pepper to taste
  • 4-5 large eggs
  • tortillas, pico de gallo, shredded cheese and cilantro for serving
