Preheat oven to 350⁰ F.
Chop all veggies and put them in the food processor to mince. Add breadcrumbs, parmesan cheese and seasonings to mixture.
Remove mixture and put it in a bowl with a squeeze each of ketchup and BBQ sauce. Mix to combine.
Spray a muffin pan with nonstick spray, and then scoop some mixture into each cup. If desired, spread the top of each cup with ketchup.
Bake for 30-35 minutes, use a food thermometer to ensure internal temperature reaches 160⁰ F. Remove and serve warm, or reheat in the microwave.
