Directions
PLACE eggs, celery, green chiles, red onion, mustard and mayonnaise in a large bowl. SEASON with salt and pepper, and gently STIR until well incorporated. FILL each slider bun with 1/2 cup egg salad. SERVE.

- 1 can diced green chiles (4 oz.)
- 1/4 cup red onion, finely chopped
- 1 Tbsp. Dijon mustard
- 1 Tbsp. mayonnaise
- 1 tsp. salt
- 1 tsp. black pepper
- 6 slider buns
Tips
For a speedy dinner, use sweet Hawaiian rolls. Don’t separate when removed from package. Lay flat on a platter, spread egg mixture across and place top layer of rolls. Pass around and have everyone pull apart.
